Greek Tomato Spread

2 pints of grape tomatoes cut in half—place cut side up on cookie sheet and salt.

Bake at 200-250 degrees for approx. 2 hours

Put tomatoes in quart jar with:

  • 1 Tbs red wine vinegar
  • 1-2 cloves garlic
  • 1 Tbs capers
  • ¼ cup dried basil

Cover with olive oil and refrigerate for at least overnight—keeps for a long time

Serve over goat cheese.

 Sweet & Sour Dressing

    From Trinity Episcopal Church, Buckingham. PA  1982

  •                1/2 c. olive oil               1/2 tsp paprika
  •                1/4 c. cider vinegar      1/4 tsp dry mustard
  •                1/4 c. sugar                  1/4 tsp celery salt
  •                1/2 tsp salt                    1/2 sm. onion chopped
